How important are specs in outsourced cleaning contracts?

If you’ve outsourced your cleaning contracts, how robust is your specification and does it matter? There’s currently a lawsuit in America relating to a cleaner who turned off a freezer because it was beeping. As a result they destroyed decades of ground breaking research. What would be the implications if a similar decision was made in one of our hospital trusts?
